Nothing like home cooked food...



Making your own bowls at home are easier than getting in your car, driving to chipotle and ordering your food. Basically it goes as the picture above. Choose anything that you love to eat in your bowl and prepare it at home. This particular bowl is a "burrito" bowl. What we like to have is:

1) Beans spiced with taco seasoning

2) Chopped romaine lettuce

3) Satueed red pepper and onions

4) Cilantro lime rice

5) Sour Cream

6) Salsa Verde

7) Adobo sauce

8) Pico de Gallo

9) Shredded cheddar cheese

All the ingredients above are home made because I had time but you can easily get some of the sauces in a jar from the local grocery store. My girls love to mix these ingredients in a tortilla. They call this "taco" night. George and I enjoy making bowls. There is never anything left over on bowl lights and the best part is that it's mostly guilt free! I promise you it's an easy and delicious dinner!


CILANTRO LIME RICE RECIPE

  • 2 Tbps olive oil

  • 1 1/2 cups basmati long grain white rice

  • 1 clove garlic, minced

  • 2 1/4 cup water

  • 1 teaspoon salt

  • Zest of one lime

  • 3 Tbsp lime juice

  • 1 cup lightly packed chopped cilantro, leaves and tender stems

1 Brown the rice: Heat the olive oil in a medium saucepan on medium high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown. Add the garlic and cook a minute more. Feel free to use white rice. I normally do but thought I'd give a healthier version on my blog.

2 Add water, salt, zest, then simmer:Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer.

Cook undisturbed for 15 minutes (check your rice package instructions), then remove from heat and let sit for 10 minutes.

Fluff the rice with a fork.

3 Stir in lime juice and cilantro: Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro.


This rice is so tasty and devious! Trust me when I tell you that there wont be any leftovers :-)
