Cookies & Cream Ice Cream Cake
George's favorite cake ever is German Chocolate Cake but because I made so many during quarantine I decided to make something a bit easier and quicker for his birthday!
2 boxes of chocolate cake mix (Yes I used cake mix, this mama is busy and I needed something quick and easy and I DO NOT REGRET IT)! I used this kind.
2 cartons of heavy whipping cream for the icing
1 1/2 quarts of cookies and cream ice cream.
Box of oreos
3 tablespoons of sugar
1 tablespoon of vanilla extract
Follow the box directions then mix the batter into two 9" pans. Bake them according to instructions (mine needed 6 minutes extra).
Let the cakes coo then flip them onto a cutting board, cut a good portion off of the top to make them even. Stick one cake in the bottom of a spring form pan then empty the ice cream and make an even layer over the bottom cake. PRO TIP: let the ice cream soften before this step. Makes it super easy to spread.
Once that is done, take the second cake layer and place it on top of the ice cream layer. Cover and freeze for a few hours.
For the icing make sure to freeze your whisk attachment before you begin making the homemade whipped cream. Pour all of the heavy whipping cream into your bowl, add the sugar and vanilla extract and whisk on high until the cream stiffens.
Now it's time to ice and pipe your cake anyway you desire! I normally bake from scratch but I was so busy that I decided to take a little short cut! #guiltfree
